Classy Crumbed Chicken

Chicken Breast / Stale Bread / Garlic / Rosemary / Thyme / Chili / Oil / Flour / Egg

OVEN on 180C

BLITZ bread, garlic, thyme, rosemary and chili in food processor

COAT chicken breast in flour

SEASON well

BEAT egg in bowl

DIP chicken in beaten egg

COAT with breadcrumbs

HEAT oil in frying pan

SEAL chicken in hot oil two minutes each side

PLACE chicken in oven for 10-12 minutes

Banging Beef Baguette

Strip Beef / Italian Roast Tomatoes / Basil / Mayo / Salt / Pepper / Bread

OVEN on 200C

PREPARE tomatoes and roast in oven

SEASON beef with salt and pepper five mins before tomatoes are ready

DASH a touch of oil into a warm frying pan

SIZZLE beef for two minutes each side

REMOVE from pan

SLICE beef strips into bitesize lengths

SPREAD a little mayo on bread

THROW on beef strips

TOP with tomatoes fresh from the oven and fresh basil

170g Self Raising Flour / 170g Plain Flour/ Bicarbonate of Soda / 290ml Buttermilk / Salt

HEAT oven to 200C

SIEVE flour, bicarbonate of soda and pinch of salt into large bowl

DIG a well in middle of flour mix

POUR in buttermilk and mix quickly into a soft dough

TURN out onto lightly…

150g Plain Flour / Baking Powder / Salt / 3 Corn Cobs / 4 Spring Onions / Bunch of Cilantro (Coriander) / 1 Egg / Ground Cumin / Ground Coriander / Oil / Water / Sweet Chili Sauce

SIEVE flour into large bowl

ADD 1/4 teaspoon baking powder/coriander, 1/2 teaspoon cumin

THROW in a pinch…

Spaghetti / Leftover Sweet Potato Wedges (see recipe) / Red Pesto (see recipe) / Basil / Parmesan / Salt / Pepper

BOIL water in large pan

SPRINKLE in salt and a drizzle of oil

ADD spaghetti, covering with water

CHOP wedges into small chunks

GRATE parmesan

DRAIN pasta after…
